If you heat the fillings separately, the sope stays firm enough. If it's a tad dry, a spritz of water makes them all nice and pillowy soft again. Now I will make a big batch for the whole week and just pull one out whenever we want a snack(they'll keep in the fridge for a week to not quite two weeks). The sope is a beautiful little snack.<BR/><BR/>robert, I don't think that the sope would travel well to work for lunch because the masa dough turns hard and crumbly soon after it cools, and it is not very well suited for microwaving.
